Jain Panipuri with acidity Regulators

One of the simple and easy recipe to make Panipuri in new style. I am always doing experiments with cooking and this one is one more best trial.

Ingredients:

20-25 Balls of Panipuri
1 cup Fresh Mint leaves 
1 cup Coriander chopped 
1 cup Fresh Curd/ Yogurt
2-3 Green Chilles
1 tbsp Panipuri Masala
2 tsp Cumin-coriander powder
1 tsp Lemon juice( if curd is sour then skip it)
1 tbsp Black Salt
4-6 cup Water

Garnishing-
1 cup Sev
1 cup Chikpeas boiled
1 tbsp Mint leaves 
1 handful Coriander chopped
1/6 Cup Boondi( chickpea flour savory) optional. Today it’s not available in home so I skipped it.

If your not making Jain then can consume like traditional way.

Procedure:

Now take all ingredients of first section except balls, and  Only 1/4 of water, blend it in blender to make smooth mixture





Look at the beautiful color. You can make kadhi( kind of soup) from this leftover

So it’s mixture is nothing but spicy buttermilk with lots of mint in it. You can add ginger powder as well which will make it more digestive. 



Now  make a small hole on upside of Panipuri ball for filling.







Keep it in tray, now serve water in bowl. Add garnishing ingredients in the ball.
